The HIKA vineyards, located in the heart of the Oria valley with a view of Mount Ernio, paint a dreamlike landscape, unique in Guipúzcoa and with an authentic Basque essence.
There are a total of 7 hectares of vineyards where different grape varieties are cultivated: Hondarrabia Zuria and Hondarrabia Beltza, the indigenous grapes of the Basque Country, Chardonnay, and finally, the newest addition, Hondarrabi Zuri Zerratia.
The vineyard is cultivated using a pergola system (which is uncommon in the appellation), thus seeking maximum sunlight to achieve better quality parameters and grape ripening. Ultimately, this is sustainable viticulture that, without using herbicides, aims to create a suitable microclimate to prevent fungal development. Coupled with southwest winds that occur in the fall, this promotes a dry and warm climate, ideal conditions for optimal ripening before harvest.
Built in 2016, it’s a modern-designed building with meticulous aesthetics, integrated into the landscape and energy-efficient, equipped with top-of-the-line machinery such as the Inertys press by Bucher and the Oresteo system, aimed at producing high-quality wines.
The entire winemaking process is designed to minimize oxidation of the must/wine from the moment it enters the cellar, thus preserving its aromatic potential to the fullest. Thanks to the carbon dioxide recovery system (Oresteo system), all wines in the cellar are aged on their lees using the carbon dioxide they generated during the alcoholic fermentation phase.
