The Pallini House was founded in 1875 by Nicola Pallini in the small village of Antrodoco. For over a century, it produced strong liqueurs, mainly based on anise. In 1917, the company moved to the Pantheon district in Rome, where its products became beloved by Italians. It wasn’t until 1999 that the Pallini family, feeling the need to take on new challenges, ventured into the production of a lemon-based liqueur that was already causing a sensation in Italy: Limoncello. It is said that Mrs. Casella, the wife of Giorgio Pallini, brought an ancient Neapolitan recipe that became the secret formula adopted by the house. The Pallinis elevated Limoncello to the status of a work of art.
For the production of Limoncello, they use the famous Sfusato lemons grown on the Amalfi Coast in a protected designation. They should not be confused with Sorrento lemons, which are grown on the nearby Sorrento Peninsula and on the island of Capri and are more acidic. Sfusato lemons are organic and hand-picked. They contain more vitamin C than any other lemon, and their zest produces a highly fragrant oil. It is precisely with the zest, carefully removed from the fruit without the white pith, infused in the finest Italian spirits, that the famous Pallini Limoncello is made.
