The Domaine Sautereau is managed by David Sautereau, whose family boasts ten generations of winemakers in Sancerre. From a young age, David knew he was destined to continue the family business, which led him to study wine in Burgundy and Champagne. He also gained experience with foreign vineyards in Switzerland, the United States, and Australia to broaden his industry knowledge. His first harvest was in 1997, where he worked alongside his parents. Today, he remains just as committed to upholding the family legacy and continues to adopt new techniques to make the most of his estate’s terroir. Regarding his work, David stated, “The magnificent terroir of Sancerre allows us to enhance Sauvignon Blanc and Pinot Noir. For me, the expression of the terroir is paramount. No step, either in the vineyards or in the cellar, should be left to chance to preserve the full richness of this expression.”
The vineyard is based on four types of soil: the caillottes, which produce fine, fruity, aromatic, and elegant wines; the terres blanches, which offer powerful aromas, freshness, minerality, and a long finish on the palate; the Kimmeridgian marls, which create volume, roundness, and complex aromas; and the terres rouges, which produce fruity and elegant wines.
